Another Reason to Love MSG

If you love flavor but you’re not yet a subscriber, we oughta fix that! That green button is the magic portal.

It gives me great joy to have received many texts, DMs and other messages with the link to this recent Atlantic article in praise of MSG. (TL;DR it could help mitigate the myriad health risks associated with excessive salt intake.)

I credit the work of Omsom, Helen Rosner, many chefs, and, frankly, the FDA (among others) with helping to debunk decades of misinformation about monosodium glutamate in the western world specifically. (Of course, if you’re sensitive to MSG, you’re sensitive to MSG.)

Personally speaking, a better understanding of this ingredient unlocked a world of flavor enhancements for me at home. I truly enjoy incorporating it into my recipes and am pleased to play a small part in showing ordinary home cooks how to use it in their meals—from melon salads to popcorn.
