When I posted a photo of Lemony Chickpea Stew to my IG stories recently, the DMs came to life like glitter on a dance floor. While the video won’t be out till tomorrow, I felt like y’all needed the recipe now.
I haven’t been this excited about a recipe in a while. I mean—I love all of my children—but I love some more than others. That’s just a metaphor (or is it???).
There’s lemon in every element and at every stage of cooking, which gives this its sunny, bright energy. It’s such a simple ingredient, but it’s transformed by when and where you add it, and whether it’s raw or cooked. There’s zest and juice simmered in the stew. Fresh juice in the magic green sauce. Wedges squeezed on top. LOL: Layers of lemon.
