This dish is vegan, crowd-sourced, serves two, makes incredible leftovers, has a built-in sauce that you can (kind of) put on anything—try rice noodles, fried eggs, lettuce wrappers, cottage cheese).
It also took me on a rollercoaster ride through the many stages of recipe development, starting with optimism and pausing for an undue amount of time at “why is this my life?”
