OK this is a stretch but I'd love to see you take on tavern-style thin crust pizza. It's beloved in Chicago (the TRUE Chicago pizza, not deep dish) and I would be so curious to hear and eat your take on it. It's much less filling than the bread-heavy deep dish, and lends itself well to any topping and sauce combo. Your sheet pan pizza recipe you did for Bon Appetit is great and I bet this would be cool too. Trying to crack the code of something thin, super crispy, and easy to do at home feels like the key.
