I live in the Netherlands and unfortunately cannot get Cabot cheese (sad trombone noise). Are there any other cheeses you would recommend using in this recipe?

A sharp cheddar or Gruyère that melts nicely will do perfectly!

Not silly at all! It’s by volume. Page 3 of the manifesto has the base recipe in cups if that makes it easy for you to swap various ingredients .
