Oh my goodness, yes! We make our own kimchi and I cannot live without it. This bowl sounds glorious and I am trying it! I want to encourage you to make kimchi grilled cheese. There is no going back. Thanks, Carla!

Your description of Cosmo brings me back to being a young high schooler with far too much to do and far too little time. A pound of salmon was for dinner last night, so perhaps something with more kimchi tonight. <3

Kimchi is the miracle ingredient and I love this kind of soupy dinner. Lately I've been beating the eggs and tempering them with a bit of broth before adding them back in and cooking until it just sort of thickens it all up, becoming creamy.

This dish is so versatile in so many ways. Its my go to meal 3 times a month. I love it spicy w charred peppers, smoky with Bentons Bacon, mushroomy, or with seared tofu or fresh hand torn noodles - experiment! Yes to Kimchi!!! Always have
